Tofu Kabobs

This recipe uses tofu and vegetables in place of the meat. A person can still get that great taste from the kabob only with a different protein source.

Ingredients:

1 clove garlic, grated

1 tbsp. red wine vinegar

1 tsp. oil

1 tsp. Italian seasoning

¼ tsp salt

1 zucchini cut into chunks

1 eggplant, cut into chunks

6 ounces tofu, cut into cubes

Turn the grill on to preheat it. Mix together the garlic, vinegar, oil, and seasonings. Add the eggplant, zucchini, and tofu. Put the zucchini, eggplant, and tofu on skewers in an alternating pattern. Grill the kabobs for around 10 minutes turning often. At this time the vegetables should be soft and they should be ready to serve.

Vegan BLTs

Now a person can enjoy this classic sandwich without using bacon. They can still get all of the great taste and they will help protect the environment.

Ingredients:

1 tbsp. avocado oil

2 tbsp. tamari

½ tsp paprika

8 ounces shiitake mushrooms with the stems removed

4 slices whole grain bread, cut in half

4 tbsp. vegan mayonnaise

½ tsp minced garlic

1 avocado, sliced

8 slices of tomato

4 lettuce leaves

Mix the oil tamari, and the paprika. Add the mushrooms and allow them to soak up these liquids. Put onto a baking sheet. Bake at 375 degrees for 30 minutes. Toast the bread in a toaster. Mix together the vegan mayonnaise and the garlic. Put the mixture on the bread. Add the mushrooms, add the avocado, tomato, lettuce and serve as sandwiches.

Roasted Vegetable Tacos

This will allow a person to enjoy the taco only it will be planted based instead of meat based.

Ingredients:

1 cup of assorted root vegetables, roasted

½ cup black beans

2 tsp olive oil

1 tsp. cumin

1 tsp chili powder

¼ tsp salt

¼ tsp black pepper

4 corn tortillas, warmed up

½ avocado sliced

1 lime, cut into wedges

Fresh Salsa

Mix the root vegetables, beans, oil, cumin, chili, and salt and pepper in a saucepan. Cover. Allow cooking over medium heat for 6 minutes. Put the vegetable mixture onto the tortillas. Top with the avocado. Serve with lime and salsa. They are best served warm.
